The earliest documentary evidence of products related to its ancestors dates back to the <strong>12th century<\/strong>. According to the Consortium for the Protection of Mozzarella di Bufala Campana PDO, some manuscripts mention that the monks of the monastery of San Lorenzo in Capua offered pilgrims a cheese called <em>mozza<\/em> or <em>provatura<\/em>.<\/p>\n<p>The word <strong>\u201cmozzarella\u201d<\/strong>, on the other hand, appears in a culinary source from <strong>1570<\/strong>, the <em>Opera<\/em> by Bartolomeo Scappi, a chef at the papal court. It is distinguished by its soft texture, smooth surface and more intense, aromatic flavour.<\/p>\n<p><strong>Fior di latte<\/strong>, made from cow&#8217;s milk, has a more delicate flavour and is the most widely used variety on Italian tables and in pizza-making. In addition to the classic spherical shape, there are <strong>bocconcini<\/strong>, <strong>ciliegine<\/strong>, <strong>nodini<\/strong>, hand-braided <strong>trecce<\/strong>, and larger formats intended for family consumption or food service. There is also a <strong>smoked<\/strong> version, produced through a smoking process that gives it a more pronounced aroma.<\/p>\n<p>Burrata, on the other hand, should not be confused with mozzarella: although it also belongs to the family of stretched-curd cheeses, it is a distinct product, characterised by a stretched-curd outer shell containing a creamy filling of stracciatella and cream.<\/p>\n<h2>How It Is Made<\/h2>\n<figure id=\"attachment_11918\" aria-describedby=\"caption-attachment-11918\" style=\"width: 640px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-11918\" src=\"https:\/\/www.guidesmart.tv\/wp-content\/uploads\/2026\/08\/ivan-pergasi-mozzarella-unsplash-1024x680.jpg\" alt=\"\" width=\"640\" height=\"425\" \/><figcaption id=\"caption-attachment-11918\" class=\"wp-caption-text\">\u00a9ivan pergasi\/unsplash<\/figcaption><\/figure>\n<p>Mozzarella is made using the <strong>stretched-curd<\/strong> technique. The cheesemaker then carries out the <em>mozzatura<\/em>, separating the individual pieces.<\/p>\n<p>The mozzarella is finally preserved in <strong>preserving liquid<\/strong>, which helps maintain its moisture, texture and organoleptic characteristics.
